Sourcing from the surrounding fields and other local farms, cocktails at Bar Campo feature a wide variety of fresh organic ingredients and small-batch barrel-aged spirits as well as house-made components including lavender simple syrup, bitters and amari. The cocktail program is a stellar example of the culinary model at Los Poblanos, bringing together teams across the property - the gardeners, the chefs, the mixologists.

Bar Campo is associated with Los Poblanos’ award-winning restaurant, Campo, known for Rio Grande Valley Cuisine. The menu is rooted in seasonal organic ingredients from our own farm as well as provisions sourced from longstanding relationships with local farmers and herdsmen. Informed by the daily harvest, Los Poblanos cuisine is constantly evolving with the seasons and celebrates the foods indigenous to New Mexico's Rio Grande Valley.
